Plant-based tiramisu without mascarpone, using a blend of tofu.
For 6/8 parts:
500g firm tofu (standard tofu)
300g silken tofu
250g sugar
200ml soy milk (or other plant-based milk)
5g agar-agar
1 medium lemon
Cocoa powder
Vanilla flavoring
Speculoos/biscoff biscuits (~150g)
Coffee

Coffee
Blend the tofus, sugar, vanilla flavoring, and lemon juice together
Meanwhile, bring the milk and agar-agar to a boil, then combine everything
Layer the cream alternately with speculoos cookies dipped in coffee (or a plant-based milk/vanilla mixture), then dust with cocoa powder
Let chill for 2 hours in the fridge
